The unique clgen-casino-it Santorini Capers grows wild on the slopes of the world famous Santorini Caldera, on the old stone walls of the medieval villages, on the traditional farming escalations (“pezoules”). The local farmers follow every step of Capers’ growth, until the harvest (end of July – early August). Flowers and leaves from the wild capers are carefully gathered and put in glass vases.
