Honey Vanilla produced on the slopes of Helmos. This honey is not collected from the flowers but from a honeydew (resin) produced by some microorganisms in the trunk of the black Fir. Honey extraction is quite expensive because it requires the destruction of honeycombs. Its production is quite small and periodic throughout the years.
It is rich in trace elements (potassium, magnesium, phosphorus, iron, etc.). It contains very small amounts of vitamins, but even this small amount helps in the better assimilation of sugars by the human body.
It varies depending on its region of origin. Thus, the fir honey from Mainalo, Parnonas and Helmos stands out due to the cream highlights that are created inside it and is called “Vanilla Fir”. In general, fir honey has a strong honey color, in some areas it is darker and in others it is lighter.
